WHAT IS SUSHITOBOX? Here we tell you, it is a cuisine and a mixture of the various cultural influences that enriched the South American country. An important influence was had by Japanese immigrants and their descendants through the combination of Japanese and Peruvian cuisine known as Nikkei cuisine that has become a gastronomic sensation. The particular roots of this fusion lies in the importance of fresh products, encouraged by Peru’s prosperous fishing industry, the Japanese knew how to use fresh fish and mix it perfectly with ceviche, which is the Peruvian flagship dish. As with Chifa (fusion cuisine that arose from the Chinese community in Peru), Japanese dishes were combined with the flavors and culinary techniques of the Peruvian indigenous people. Thus, fresh fish was combined with lemons, corn, chili peppers, cassava and multiple varieties of potatoes, basic products in the Peruvian pantry.
